Vegetable Pasta Rice Bowl

Ingredients:

- 1 red pepper, diced
- 1 aubergine, diced
- 1 red onion, diced
- 2 cloves garlic, minced
- 2 cups cooked pasta
- 2 cups cooked rice
- 1 potato, diced
- 1 courgette, diced
- 1 carrot, diced
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the red pepper, aubergine, red onion, garlic, potato, courgette, and carrot. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

3. Add the chickpeas and cook for an additional 5 minutes.

4. Add the cooked pasta and rice to the skillet and stir to combine.

5. Season with salt and pepper, to taste.

6. Serve warm. Enjoy!
