Recipe Name: Vegetable Pulao
Ingredients:
- 1 cup basmati rice
- 1 onion, thinly sliced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 cup green peas
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 2 cups vegetable broth
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
2. In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
3. Add the sliced onions and sauté until they turn translucent.
4. Add the minced garlic and grated ginger, and sauté for another minute until fragrant.
5. Add the diced carrots, bell pepper, and green peas. Cook for 5-7 minutes until the vegetables are slightly tender.
6. Stir in the soaked and drained rice, turmeric powder, garam masala, and salt. Mix well to coat the rice and vegetables with the spices.
7. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot with a lid, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
8. Once the pulao is cooked, fluff the rice with a fork and garnish with fresh cilantro before serving.
