Make Vegetable Ratatouille
Recipe: Vegetable Ratatouille
Ingredients:
- 1 eggplant
- 1 zucchini
- 1 onion
- 1 carrot
- 2 cloves of garlic
- 1 bell pepper
Instructions:
1. Begin by washing and chopping all the vegetables into small cubes.
2. Heat some olive oil in a large pan over medium heat.
3. Add the chopped onion and garlic to the pan and sauté until fragrant.
4. Next, add the diced carrot and bell pepper to the pan and cook for a few minutes until they start to soften.
5. Add the chopped eggplant and zucchini to the pan and stir well to combine with the other vegetables.
6. Season the mixture with salt, pepper, and any other desired herbs or spices.
7. Cover the pan and let the vegetables cook for about 15-20 minutes, stirring occasionally.
8. Once all the vegetables are tender and cooked through, remove the pan from the heat.
9. Serve the vegetable ratatouille hot as a side dish or over cooked rice or pasta. Enjoy!
