Make Vegetable Rice Bowl

Vegetable Rice Bowl

Ingredients:

- 2 cups cooked rice
- 1 zucchini, diced
- 2 potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the diced zucchini and potatoes. Drizzle with olive oil and season with salt and pepper.

3. Spread the vegetables out on a baking sheet and bake for 25-30 minutes, or until the vegetables are tender.

4. In a large bowl, combine the cooked rice and roasted vegetables.

5. Serve warm. Enjoy!
