Vegetable Stew
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 zucchini, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes, undrained
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
2. Add the carrots, potatoes, green beans, zucchini, oregano, thyme, paprika, salt, and pepper. Cook, stirring occasionally, for 5 minutes.
3. Add the vegetable broth and diced tomatoes and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the vegetables are tender, about 20 minutes.
4. Serve hot. Enjoy!
