Vegetable Stew with Zucchini, Chickpeas, Tomatoes, and Carrots

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 zucchinis, diced
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the carrots and zucchini and cook for another 5 minutes.

4. Add the chickpeas, tomatoes, oregano, basil, paprika, and salt and pepper. Stir to combine.

5. Bring the mixture to a boil and then reduce the heat to low. Simmer for 15-20 minutes, or until the vegetables are tender.

6. Serve warm. Enjoy!
