Vegetable Stir Fry
Ingredients:
- 1 eggplant, diced
- 1 head of broccoli, cut into florets
- 1 tomato, diced
- 1 bell pepper, diced
- 1 cup of brussel sprouts, halved
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the eggplant and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
3. Add the broccoli, bell pepper, and brussel sprouts. Cook for an additional 5 minutes, stirring occasionally.
4. Add the tomato and cook for an additional 2 minutes.
5. Serve the stir fry warm. Enjoy!
