Vegetable Stir Fry
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 1 cup peas
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and cook for 3-4 minutes, stirring occasionally.
3. Add the sliced carrots and cook for an additional 3-4 minutes.
4. Add the peas and cook for an additional 2-3 minutes.
5. Season with salt and pepper to taste.
6. Serve hot. Enjoy!
