Vegetable Stir Fry
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 red onion, diced
- 2 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 1 cup sliced mushrooms
- 1 cup julienned carrots
- 1 cup snow peas
- 1 cup broccolini
- 1 cup bean sprouts
- 1 cup sliced water chestnuts
- 1 cup bok choy
- 1 cup baby corn
- 1 red bell pepper, sliced
- 2 tablespoons hoisin sauce
- 2 tablespoons sriracha
- 1/4 cup water
- 8 ounces brown rice spaghetti
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the red onion and garlic and cook for 2 minutes, stirring occasionally.
3. Add the ginger, mushrooms, carrots, snow peas, broccolini, bean sprouts, water chestnuts, bok choy, and baby corn. Cook for 5 minutes, stirring occasionally.
4. Add the bell pepper and cook for an additional 2 minutes.
5. Add the hoisin sauce, sriracha, and water. Stir to combine.
6. Add the brown rice spaghetti and cook for 8-10 minutes, stirring occasionally.
7. Serve the stir fry hot. Enjoy!
