Vegetable Stir Fry
Ingredients:
- 2 carrots, peeled and sliced
- 1 eggplant, cubed
- 2 tablespoons of soya sauce
- 2 cups of salad leaves
- 2 cloves of garlic, minced
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the carrots and eggplant to the skillet and cook for 5 minutes, stirring occasionally.
3. Add the soya sauce, salad leaves, and garlic to the skillet and cook for an additional 3 minutes, stirring occasionally.
4. Serve the stir fry warm. Enjoy!
