Vegetarian Berenjena Bake
Ingredients:
- 2 large berenjenas, sliced into 1/2 inch rounds
- 1/2 cup shredded coconut
- 1/2 cup grated zuchini
- 1/2 cup grated cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Arrange the berenjena slices in a single layer on a baking sheet.
3. Drizzle the olive oil over the berenjenas and season with salt and pepper.
4. Bake for 15 minutes, or until the berenjenas are tender.
5. Remove from the oven and top with the shredded coconut, grated zuchini, and grated cheese.
6. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
7. Serve warm. Enjoy!
