Vegetarian Chili

Ingredients:

- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 head of broccoli, chopped
- 1 can of white beans, drained and rinsed
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of chili powder
- 1/2 teaspoon of smoked paprika
- 1/4 teaspoon of cayenne pepper
- 2 cups of vegetable broth
- 1/2 cup of ajo cebolla
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the broccoli and cook for another 5 minutes.

4. Add the white beans, cumin, oregano, chili powder, smoked paprika, cayenne pepper, and vegetable broth.

5. Bring to a boil, then reduce the heat and simmer for 20 minutes.

6. Add the ajo cebolla and season with salt and pepper, to taste.

7. Simmer for another 10 minutes.

8. Serve hot and enjoy!
