Make Vegetarian Egg Fried Rice

Vegetarian Egg Fried Rice

Ingredients:

- 1 egg
- 1/2 block of firm tofu, cubed
- 1/2 cup of mushrooms, sliced
- 1/2 aubergine, cubed
- 1/2 cup of artichoke hearts, sliced
- 2 cups of cooked white rice
- 2 tablespoons of sesame oil
- 2 tablespoons of soy sauce
- 2 cloves of garlic, minced
- 1 teaspoon of freshly grated ginger
- Salt and pepper, to taste

Instructions:

1. Heat the sesame oil in a large skillet over medium-high heat.

2. Add the cubed tofu and cook until golden brown, about 5 minutes.

3. Add the mushrooms, aubergine, and artichoke hearts and cook until tender, about 5 minutes.

4. Add the garlic and ginger and cook for 1 minute.

5. Push the vegetables to one side of the skillet and add the egg. Scramble the egg until cooked through.

6. Add the cooked rice and stir to combine.

7. Add the soy sauce and season with salt and pepper, to taste.

8. Cook for an additional 5 minutes, stirring occasionally.

9. Serve hot. Enjoy!
