Vegetarian Lentil and Eggplant Stew
Ingredients:
-1 cup cooked lentils
-1 eggplant, cubed
-1 cup chopped champignon mushrooms
-1/2 cup chopped broccoli
-1/2 teaspoon ground black pepper
-1 egg, beaten
-2 tablespoons olive oil
-1/2 teaspoon salt
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the eggplant and mushrooms and cook for 5 minutes, stirring occasionally.
3. Add the broccoli, lentils, pepper, and salt and cook for an additional 5 minutes.
4. Pour the beaten egg over the top of the mixture and stir to combine.
5. Reduce the heat to low and cover the pot. Simmer for 10 minutes, stirring occasionally.
6. Serve warm. Enjoy!
