Vegetarian Paneer Rice Bowl

Ingredients:

-1 cup cooked white rice
-1/2 cup cooked quinoa
-1/2 cup cooked chickpeas
-1/2 cup diced paneer
-1/2 cup diced carrots
-1/2 cup diced potatoes
-1/2 cup diced cauliflower
-1/4 cup cream
-Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F.

2. Place the diced paneer, carrots, potatoes, and cauliflower on a baking sheet and season with salt and pepper.

3. Bake in preheated oven for 15-20 minutes, or until vegetables are tender.

4. In a large bowl, combine the cooked white rice, quinoa, and chickpeas.

5. Add the roasted vegetables and cream and mix until everything is evenly combined.

6. Serve in individual bowls and enjoy!
