Make Vegetarian Ratatouille
Vegetarian Ratatouille
Ingredients:
-1/2 cup seitan, diced
-1/2 cup tofu, diced
-1/2 cup cooked rice
-1/2 cup cooked pasta
-1/2 cup cooked lentils
-1/2 cup cooked chickpeas
-1/2 cup cooked red beans
-1 eggplant, diced
-2 carrots, diced
-1/2 cup butternut squash, diced
-2 potatoes, diced
-1 zucchini, diced
-2 tomatoes, diced
-1/2 cup ricotta cheese
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine the seitan, tofu, rice, pasta, lentils, chickpeas, and red beans.
3. In a separate bowl, combine the eggplant, carrots, butternut squash, potatoes, zucchini, and tomatoes.
4. Grease a 9x13 inch baking dish with olive oil.
5. Spread the seitan and tofu mixture in the bottom of the baking dish.
6. Top with the eggplant, carrots, butternut squash, potatoes, zucchini, and tomatoes.
7. Sprinkle the ricotta cheese over the top.
8. Bake in preheated oven for 30 minutes, or until vegetables are tender.
9. Serve warm. Enjoy!
