Make Vegetarian Rice Bowl
Vegetarian Rice Bowl
Ingredients:
-1 cup of uncooked white rice
-2 eggs
-1/2 cup of grated cheese
-1/2 onion, diced
-1/2 teaspoon of freshly ground black pepper
-1 clove of garlic, minced
-1/2 teaspoon of salt
-1 cup of fresh broccoli florets
-1/2 cup of cubed pumpkin
-1/2 cup of soya meat
-1/2 cup of diced zucchini
-1/2 cup of uncooked couscous
-1/2 cup of diced tomato
-1 teaspoon of dried dill
-1/2 cup of grated carrot
-1/4 cup of crumbled feta cheese
Instructions:
1. Preheat oven to 350°F.
2. In a large pot, bring 2 cups of water to a boil. Add the rice and reduce heat to low. Simmer for 15 minutes or until the rice is cooked.
3. Meanwhile, in a medium bowl, whisk together the eggs, cheese, onion, pepper, garlic, and salt.
4. Grease a 9-inch baking dish with cooking spray. Spread the cooked rice in the bottom of the dish.
5. Pour the egg mixture over the rice. Top with the broccoli, pumpkin, soya meat, zucchini, couscous, tomato, dill, carrot, and feta cheese.
6. Bake for 25-30 minutes or until the top is golden brown and the center is set.
7. Serve warm. Enjoy!
