Make Vegetarian Rice Pilaf



Vegetarian Rice Pilaf

Ingredients:

- 2 cups of long grain rice
- 1 medium onion, diced
- 2 tablespoons of olive oil
- 2 teaspoons of salt
- 1 teaspoon of ground black pepper
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of ground turmeric
- 1/2 teaspoon of ground cardamom
- 2 cups of plain curd

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the diced onion and sauté until softened, about 5 minutes.

3. Add the rice and stir to coat with the oil.

4. Add the salt, pepper, cumin, coriander, turmeric, and cardamom and stir to combine.

5. Pour in the curd and stir to combine.

6. Increase the heat to high and bring the mixture to a boil.

7. Reduce the heat to low and cover the pot.

8. Simmer for 20 minutes, or until the rice is tender.

9. Fluff the rice with a fork and serve.
