Vegetarian Soy Chunks Parmigiana
Ingredients:
- 2 cups dehydrated soy chunks
- 2 cups parmigiana cheese, grated
- 2 cups tomato sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
Instructions:
1. Preheat oven to 350°F.
2. Place the dehydrated soy chunks in a bowl and cover with warm water. Let soak for 10 minutes.
3. Drain the soy chunks and pat dry with paper towels.
4. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute.
5. Add the soy chunks and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
6. Grease a 9x13 inch baking dish with cooking spray.
7. Spread half of the tomato sauce in the bottom of the dish.
8. Layer the soy chunks over the sauce.
9. Top with the remaining tomato sauce and sprinkle with the parmigiana cheese.
10. Bake for 25 minutes, or until the cheese is melted and bubbly.
11. Sprinkle with fresh parsley and serve.
