Vegetarian Soya Mince Pasta
Ingredients:
- 200g pasta
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1 large tomato, diced
- 1 large carrot, grated
- 50g grated cheese
- 200g soya mince
- 1 teaspoon Italian herbs
- 1/2 cup vegetable stock
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
2. Heat a large skillet over medium heat. Add the garlic and sauté for 1 minute.
3. Add the salt, tomato, carrot, cheese, soya mince, Italian herbs, and vegetable stock. Stir to combine.
4. Simmer for 5 minutes, stirring occasionally.
5. Add the cooked pasta to the skillet and stir to combine.
6. Cook for an additional 2-3 minutes, or until the pasta is heated through.
7. Serve hot and enjoy!
