Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

Instructions:
1. Rinse the quinoa under cold water and drain.
2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the broth is absorbed.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sauté until fragrant.
4. Add the red bell pepper, zucchini, and cherry tomatoes to the skillet. Cook until the vegetables are tender.
5. Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Mix well to combine all the ingredients.
6. Cook for an additional 5 minutes to allow the flavors to meld together.
7. Remove from heat and garnish with fresh parsley before serving.
