Veggie Basil Pasta
Ingredients:
-1 lb. of your favorite pasta
-2 tablespoons of butter
-1 onion, chopped
-2 cloves of garlic, minced
-2 large tomatoes, diced
-2 potatoes, peeled and diced
-1/4 cup of soy sauce
-1/4 cup of milk
-1/4 cup of fresh basil, chopped
-1 teaspoon of garlic powder
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomatoes, potatoes, soy sauce, milk, and basil. Simmer for 10 minutes, stirring occasionally.
4. Add the cooked pasta to the skillet and stir to combine. Sprinkle with garlic powder and season with salt and pepper to taste.
5. Serve hot. Enjoy!
