Veggie Bean Stew
Ingredients:
- 1 can of beans (your choice)
- 1 sweet potato, peeled and diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 8 ounces of mushrooms, sliced
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic and cook until the onions are translucent, about 5 minutes.
3. Add the sweet potato and mushrooms and cook for an additional 5 minutes.
4. Add the beans and stir to combine.
5. Reduce the heat to low and cover the pot. Simmer for 20 minutes, stirring occasionally.
6. Serve hot. Enjoy!
