Veggie Chili
Ingredients:
-1 onion, diced
-1 can of black beans, drained and rinsed
-1 can of kidney beans, drained and rinsed
-1 can of diced tomatoes
-1 tablespoon of chili powder
-1 teaspoon of cumin
-1 teaspoon of garlic powder
-1 teaspoon of oregano
-Salt and pepper, to taste
Instructions:
1. Heat a large pot over medium heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Add the beans, tomatoes, chili powder, cumin, garlic powder, oregano, salt, and pepper. Stir to combine.
4. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
5. Taste and adjust seasonings, if desired.
6. Serve with your favorite toppings, such as sour cream, shredded cheese, and diced avocado. Enjoy!
