Make Veggie Egg Noodle Stir-Fry

Recipe Name: Veggie Egg Noodle Stir-Fry

Ingredients:
- 200g noodles
- 2 eggs
- 2 slices of toast, cubed
- 1 sweet pepper, sliced
- 1 onion, sliced
- 2 tbsp vegetable oil
- Salt and pepper to taste

Instructions:
1. Cook the noodles according to package instructions. Drain and set aside.
2. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
3. Add the sliced onion and sweet pepper to the skillet and sauté until they are softened, about 5 minutes.
4. Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
5. Add the cooked noodles to the skillet and toss everything together.
6. Season with salt and pepper to taste.
7. In a separate pan, heat the remaining tablespoon of vegetable oil and toast the cubed bread until crispy.
8. Serve the veggie egg noodle stir-fry topped with the toasted bread cubes.
