Make Veggie Egg Sandwich

Veggie Egg Sandwich

Ingredients:

- 2 slices of bread
- 1/4 onion, diced
- 1 tomato, diced
- 1 egg
- 1 carrot, grated

Instructions:

1. Heat a skillet over medium heat.

2. Add the diced onion and tomato to the skillet and cook until softened, about 5 minutes.

3. Crack the egg into the skillet and scramble until cooked through.

4. Toast the bread slices in a toaster or in the skillet.

5. Spread the cooked vegetables and egg onto one of the slices of toast.

6. Top with the grated carrot and the other slice of toast.

7. Serve and enjoy!
