Veggie Fiesta Rice Bowl

Ingredients:

-1 cup cooked white or brown rice
-1 cup cooked chickpeas
-1 cup cooked string beans
-1 cup diced celery
-1/2 cup salsa

Instructions:

1. Cook the rice according to package instructions.

2. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the string beans, celery, and chickpeas and cook for 5 minutes, stirring occasionally.

3. Add the cooked rice and salsa to the skillet and stir to combine. Cook for an additional 5 minutes, stirring occasionally.

4. Serve the veggie fiesta rice bowl warm. Enjoy!
