Veggie Fried Rice

Ingredients:

- 2 eggs
- 1 tomato, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cucumber, diced
- 1 teaspoon paprika
- 1 cup fries, diced
- 2 tablespoons oil
- 2 cups cooked rice
- 2 tablespoons pasta, cooked
- 2 tablespoons ketchup

Instructions:

1. Heat oil in a large skillet over medium heat.

2. Add onion and garlic and sauté for 3-4 minutes, until onion is softened.

3. Add tomato, cucumber, paprika, and fries and cook for another 3-4 minutes.

4. Add cooked rice and pasta and stir to combine.

5. Push the mixture to one side of the skillet and crack eggs into the other side. Scramble eggs until cooked through.

6. Stir the eggs into the rice mixture and cook for another 2-3 minutes, until everything is heated through.

7. Serve with ketchup. Enjoy!
