Veggie Fried Rice
Ingredients:
- 2 cups cooked white rice
- 2 cups mixed vegetables (such as carrots, peas, corn, etc.)
- 2 tablespoons soy sauce
- 2 tablespoons peanut butter
- 2 tablespoons chia seeds
- 2 eggs, lightly beaten
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the cooked rice and vegetables to the skillet and stir to combine.
3. Cook for 5 minutes, stirring occasionally.
4. Add the soy sauce, peanut butter, and chia seeds to the skillet and stir to combine.
5. Cook for an additional 5 minutes, stirring occasionally.
6. Push the rice and vegetables to the side of the skillet and add the beaten eggs.
7. Scramble the eggs until cooked through, then stir into the rice and vegetables.
8. Cook for an additional 2-3 minutes, stirring occasionally.
9. Serve hot. Enjoy!
