Veggie Fried Rice

Ingredients:

- 2 cups cooked brown rice
- 2 cups cooked quinoa
- 2 eggs
- 2 cups spinach
- 1 bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced onion and bell pepper and cook until softened, about 5 minutes.

3. Add the cooked brown rice and quinoa to the skillet and stir to combine.

4. Push the rice and quinoa to the side of the skillet and add the eggs. Scramble the eggs until cooked through.

5. Add the spinach and stir to combine.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
