Veggie Fried Rice

Ingredients:

-1 cup cooked white rice
-1/2 cup diced cucumber
-1/2 cup diced tomato
-1/2 cup diced tofu
-1 egg
-1 tablespoon olive oil
-Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced cucumber, tomato, and tofu to the skillet and cook for 3-4 minutes, stirring occasionally.

3. Add the cooked rice to the skillet and stir to combine.

4. Crack the egg into the skillet and stir to combine.

5. Cook for an additional 3-4 minutes, stirring occasionally, until the egg is cooked through.

6. Season with salt and pepper to taste.

7. Serve hot and enjoy!
