Recipe: Veggie Fried Rice with Feta Cheese

Ingredients:
- 2 cups cooked rice
- 3 eggs, beaten
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- Soy sauce for seasoning
- Vegetable oil for cooking

Instructions:
1. Heat a large skillet or wok over medium heat and add some vegetable oil.
2. Add the beaten eggs and scramble them until cooked through. Remove from the skillet and set aside.
3. In the same skillet, add a little more oil if needed and sauté the onions and garlic until fragrant.
4. Add the bell pepper, broccoli, and cauliflower to the skillet. Cook until the vegetables are tender but still crisp.
5. Stir in the cooked rice and mix well with the vegetables.
6. Add the scrambled eggs back to the skillet and mix everything together.
7. Season with salt, pepper, and soy sauce to taste. Stir well to combine all the flavors.
8. Finally, sprinkle the crumbled feta cheese over the fried rice and gently mix it in.
