Veggie Frittata

Ingredients:

- 2 red peppers, diced
- 1 red onion, diced
- 1/2 cup cashew nuts, chopped
- 1 cup grated carrots
- 1/2 cup feta cheese, crumbled
- 2 tomatoes, diced
- 6 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large oven-safe skillet over medium heat.

3. Add red peppers and onions and sauté until softened, about 5 minutes.

4. Add cashew nuts, grated carrots, feta cheese, and tomatoes and cook for an additional 3 minutes.

5. In a separate bowl, whisk together eggs and season with salt and pepper.

6. Pour egg mixture into the skillet and stir to combine with the vegetables.

7. Cook for 5 minutes, stirring occasionally.

8. Place skillet in preheated oven and bake for 15 minutes, or until eggs are set.

9. Serve warm. Enjoy!
