Veggie Frittata Wraps

Ingredients:
- 4 tortillas (corn or flour)
- 6 eggs
- 2 tablespoons of olive oil
- 2 cups of spinach, chopped
- 1/2 cup of cherry tomatoes, halved
- 1/2 cup of feta cheese, crumbled
- 2 tablespoons of fresh basil, chopped
- Salt and pepper to taste

Instructions:
1. Preheat oven to 350°F.

2. In a large bowl, whisk together eggs, salt, and pepper.

3. Heat olive oil in a large skillet over medium heat. Add spinach and cook until wilted, about 2 minutes.

4. Add cherry tomatoes and cook for an additional minute.

5. Add egg mixture to the skillet and stir to combine. Cook until eggs are just set, about 5 minutes.

6. Place tortillas on a baking sheet. Divide egg mixture among the tortillas and top with feta cheese and fresh basil.

7. Bake for 8-10 minutes, or until tortillas are lightly golden and eggs are cooked through.

8. Serve warm. Enjoy!
