Veggie Lentil Burger

Ingredients:

-1 cup cooked lentils
-1/4 cup crumbled feta cheese
-1/4 cup chopped fresh basil
-1/4 cup diced tomato
-1/4 cup diced carrot
-1/4 cup diced avocado
-2 burger buns
-2 lettuce leaves
-2 tablespoons hummus
-2 tablespoons sliced olives

Instructions:

1. Preheat oven to 375 degrees F.

2. In a medium bowl, combine the cooked lentils, feta cheese, basil, tomato, and carrot. Mix until all ingredients are evenly distributed.

3. Form the mixture into two patties and place on a baking sheet lined with parchment paper.

4. Bake in preheated oven for 20 minutes, flipping halfway through.

5. While the patties are baking, assemble the burgers. Place a lettuce leaf on each bun, followed by a patty, hummus, avocado, and olives.

6. Serve and enjoy!
