Veggie-Packed Pasta Bowl
Ingredients:
- 2 tablespoons of flaxseed
- 4 cups of vegetable broth
- 8 ounces of pasta
- 1 cup of cooked chickpeas
- 1 cup of cooked lentils
- 2 cups of spinach
- 1 cup of broccoli florets
- 1 avocado, diced
- 1 carrot, grated
- 2 cloves of garlic, minced
- 1 green pepper, diced
- 1 teaspoon of grated ginger
- 4 ounces of tempeh, diced
- 4 ounces of tofu, diced
Instructions:
1. In a large pot, heat the vegetable broth over medium heat.
2. Add the flaxseed, pasta, chickpeas, lentils, spinach, broccoli, carrot, garlic, green pepper, ginger, tempeh, and tofu.
3. Simmer for 10 minutes, stirring occasionally.
4. Add the diced avocado and simmer for an additional 5 minutes.
5. Serve the veggie-packed pasta bowl warm. Enjoy!
