Veggie Pasta with Spinach and Mushrooms
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tomatoes, diced
- 4 cups baby spinach
- 8 ounces uncooked pasta
- 2 eggs
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the mushrooms and cook until softened, about 5 minutes.
3. Add the tomatoes and cook for an additional 2 minutes.
4. Add the spinach and cook until wilted, about 2 minutes.
5. Meanwhile, cook the pasta according to package instructions.
6. Once the pasta is cooked, drain it and add it to the skillet with the vegetables.
7. In a small bowl, whisk together the eggs and season with salt and pepper.
8. Pour the egg mixture into the skillet and stir to combine.
9. Cook until the eggs are cooked through, about 5 minutes.
10. Serve warm. Enjoy!
