Veggie Pesto Gnocchi Bowl

Ingredients:

- 2 cups cooked Pilla rice
- 1 block of tofu, cubed
- 2 cups of salad greens
- 1/2 cup of gouchgan
- 1/4 cup of crumbled feta cheese
- 1 cup of frozen vegetables
- 1/4 cup of pesto
- 1 package of gnocchi

Instructions:

1. Preheat oven to 350°F.

2. Spread cubed tofu on a baking sheet and bake for 20 minutes.

3. Meanwhile, cook gnocchi according to package instructions.

4. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add frozen vegetables and cook for 5 minutes.

5. Add cooked gnocchi and pesto to the skillet and stir to combine. Cook for an additional 5 minutes.

6. In a large bowl, combine cooked Pilla rice, salad greens, gouchgan, feta cheese, and cooked tofu.

7. Add the pesto gnocchi mixture to the bowl and stir to combine.

8. Serve the veggie pesto gnocchi bowl warm. Enjoy!
