Veggie Pizza Rice Bowl

Ingredients:

- 2 cups cooked white rice
- 1 cup cooked broccoli
- 1 cup cooked spinach
- 1/4 cup ketchup
- 1/4 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced pepperoni
- 1/2 cup ice cream

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine cooked rice, broccoli, spinach, ketchup, mozzarella cheese, and cheddar cheese. Mix until all ingredients are evenly distributed.

3. Spread the mixture into a 9-inch baking dish. Top with pepperoni.

4. Bake for 20 minutes, or until cheese is melted and bubbly.

5. Remove from oven and let cool for 5 minutes.

6. Scoop ice cream onto the top of the pizza rice bowl.

7. Serve and enjoy!
