Veggie Potato Bowl
Ingredients:
- 2 large potatoes
- 2 tablespoons oil
- Salt and pepper to taste
- 1 teaspoon of herbs (such as oregano, thyme, or rosemary)
- 1/4 cup of starches (such as quinoa or brown rice)
- 1/4 cup of protein (such as cooked beans, tofu, or tempeh)
- 1 egg
- 1/2 cup of lettuce
- 1/2 cup of vegetables (such as diced tomatoes, bell peppers, or onions)
Instructions:
1. Preheat oven to 400°F.
2. Wash and dry the potatoes, then cut into cubes.
3. Place the potatoes on a baking sheet and drizzle with oil. Sprinkle with salt and pepper and herbs.
4. Bake in preheated oven for 25-30 minutes, or until potatoes are golden and crispy.
5. Meanwhile, cook the starches and protein according to package instructions.
6. In a separate pan, fry the egg.
7. To assemble the bowl, place the potatoes, starches, protein, egg, lettuce, and vegetables in a bowl.
