Veggie Quinoa Bowl


-1 cup uncooked quinoa
-1/2 cup cooked black beans
-1/2 cup cooked white beans
-1/2 cup cooked peas
-1/2 cup cooked rice
-1/2 cup chopped asparagus
-1/2 cup chopped celery
-1/2 cup chopped lettuce
-1/2 cup chopped onion
-2 cloves garlic, minced
-1/2 cup chopped tomato
-1/2 cup diced potato
-1 jalapeno, diced
-1 teaspoon of your favorite spice
-1/2 cup spinach
-1/2 cup water


1. In a large pot, heat the water over medium-high heat.

2. Add the quinoa, beans, peas, and rice to the pot and stir to combine.

3. Reduce the heat to medium-low and simmer for 15 minutes, stirring occasionally.

4. Add the asparagus, celery, lettuce, onion, garlic, tomato, potato, jalapeno, and spice and stir to combine.

5. Simmer for an additional 10 minutes, stirring occasionally.

6. Add the spinach and stir to combine.

7. Simmer for an additional 5 minutes, stirring occasionally.

8. Serve warm and enjoy!
