Veggie Rice Bake
Ingredients:
- 1 cup of long grain white rice
- 1/2 cup of olive oil
- 1/4 cup of butter
- 1/2 onion, diced
- 1 cup of sliced mushrooms
- 1 cup of diced olives
- 1 cup of diced potatoes
- 1 cup of cooked broccoli
- 1/2 cup of mozzarella cheese
- 1/2 cup of tomato sauce
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large pot, heat the olive oil and butter over medium heat.
3. Add the onion and mushrooms and cook until the onion is translucent, about 5 minutes.
4. Add the olives, potatoes, and cooked broccoli and cook for an additional 5 minutes.
5. Add the rice and stir to combine.
6. Pour the tomato sauce over the top and stir to combine.
7. Season with salt and pepper to taste.
8. Transfer the mixture to a 9x13 baking dish.
9. Sprinkle the mozzarella cheese over the top.
10. Bake in preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
11. Serve hot. Enjoy!
