Veggie Ricotta Bake
Ingredients:
-1 large onion, chopped
-2 cloves garlic, minced
-2 tomatoes, chopped
-1 cup ricotta cheese
-2 tablespoons olive oil
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, heat olive oil over medium heat.
3. Add the onion and garlic and cook until softened, about 5 minutes.
4. Add the tomatoes and cook for an additional 3 minutes.
5. Remove from heat and transfer the mixture to a 9x13 inch baking dish.
6. Spread the ricotta cheese over the top of the vegetables.
7. Bake for 20 minutes, or until the cheese is melted and bubbly.
8. Serve warm. Enjoy!
