Veggie Steak Fajitas
Ingredients:
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 vegan steak strips
Instructions:
1. Preheat a large skillet over medium-high heat.
2. Add the olive oil to the skillet and heat until shimmering.
3. Add the bell peppers and onion to the skillet and cook for 5 minutes, stirring occasionally.
4. In a small bowl, whisk together the lime juice, chili powder, cumin, garlic powder, paprika, salt, and pepper.
5. Add the vegan steak strips to the skillet and pour the lime juice mixture over the top.
6. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and the vegan steak strips are cooked through.
7. Serve the veggie steak fajitas with warm tortillas and your favorite toppings. Enjoy!
