Veggie Stuffed Potatoes

Ingredients:

- 4 large potatoes

- 1 tomato, diced

- 1 pepper, diced

- 2 tablespoons olive oil

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1/4 cup shredded cheese

- 2 tablespoons chopped fresh parsley

Instructions:

1. Preheat oven to 375 degrees F.

2. Wash and dry potatoes. Pierce each potato several times with a fork. Place potatoes on a baking sheet and bake for 45 minutes or until tender.

3. Remove potatoes from oven and let cool.

4. Cut potatoes in half lengthwise. Scoop out the insides of the potatoes, leaving a thin layer of potato on the skin.

5. In a medium bowl, combine the potato insides, tomato, pepper, olive oil, salt, and pepper. Mix until combined.

6. Stuff the potato halves with the mixture. Sprinkle with cheese and parsley.

7. Place the potatoes back on the baking sheet and bake for an additional 15 minutes or until cheese is melted and potatoes are heated through.

8. Serve warm. Enjoy!
