Vietnamese Spring Rolls

Ingredients:

- 2 ounces of rice vermicelli
- 10 rice wrappers
- 1/2 pound of cooked shrimp, chopped
- 2 cups of chopped lettuce leaves
- 2 tablespoons of fresh mint leaves, chopped
- 1/4 cup of water
- 2 tablespoons of fresh lime juice
- 1 tablespoon of white sugar
- 2 tablespoons of fish sauce
- 1 clove of garlic, minced
- 2 tablespoons of chili sauce
- 2 tablespoons of hoisin sauce
- 2 tablespoons of chopped peanuts

Instructions:

1. Cook the rice vermicelli according to package instructions. Drain and set aside.

2. Fill a shallow bowl with warm water. Dip one rice wrapper into the water until it is soft and pliable.

3. Place the wrapper on a plate and fill with the cooked vermicelli, shrimp, lettuce, mint leaves, and peanuts.

4. Fold the wrapper over the filling and roll up tightly. Place the roll on a plate.

5. Repeat with the remaining wrappers and filling.

6. In a small bowl, mix together the water, lime juice, sugar, fish sauce, garlic, chili sauce, and hoisin sauce.

7. Heat a large skillet over medium heat. Add the spring rolls and cook for 2-3 minutes per side, or until golden brown.

8. Serve the spring rolls with the sauce for dipping. Enjoy!
