Vietnamese Spring Rolls

Ingredients:

-1/2 lb shrimp, peeled and deveined
-1/2 lb ground pork
-1/2 lb vermicelli noodles
-1 head of lettuce, shredded
-1/2 cup fresh mint, chopped
-1/2 cup fresh cilantro, chopped
-12-15 rice paper wrappers

Instructions:

1. Cook the vermicelli noodles according to package instructions. Drain and set aside.

2. Heat a large skillet over medium-high heat. Add the ground pork and cook until no longer pink, about 5 minutes.

3. Add the shrimp and cook until just cooked through, about 3 minutes.

4. Remove from heat and let cool slightly.

5. In a large bowl, combine the cooked noodles, pork, shrimp, lettuce, mint, and cilantro.

6. Working one at a time, dip a rice paper wrapper in a bowl of warm water for about 10 seconds. Place the wrapper on a cutting board or plate.

7. Place a few spoonfuls of the filling in the center of the wrapper. Fold the sides of the wrapper over the filling, then roll up the wrapper to form a spring roll.

8. Repeat with the remaining wrappers and filling.

9. Serve with your favorite dipping sauce. Enjoy!
