Whiskey-Glazed Fish with Almonds and Carrots

Ingredients:

- 4 (4-ounce) fish fillets
- 2 tablespoons whiskey
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 1/4 cup slivered almonds
- 1 large carrot, peeled and cut into thin strips

Instructions:

1. Preheat oven to 375°F.

2. Place the fish fillets in a baking dish.

3. In a small bowl, whisk together the whiskey, honey, olive oil, garlic powder, and thyme.

4. Pour the mixture over the fish and season with salt and pepper.

5. Sprinkle the almonds and carrots over the fish.

6. Bake for 15-20 minutes, or until the fish is cooked through and the carrots are tender.

7. Serve warm. Enjoy!
