White Bean and Potato Pasta
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 tomato, diced
- 1 potato, diced
- 1 can white beans, drained and rinsed
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 2 cups cooked pasta
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, garlic, and carrot, and cook until the vegetables are softened, about 5 minutes.
3. Add the tomato, potato, white beans, oregano, red pepper flakes, and salt and pepper. Cook for an additional 5 minutes.
4. Add the cooked pasta and stir to combine.
5. Cook until the pasta is heated through and the sauce has thickened, about 5 minutes.
6. Serve warm. Enjoy!
