White Bean and Sausage Soup

Ingredients:

-2 tablespoons olive oil
-1 pound sausage, cut into small pieces
-2 cloves garlic, minced
-1 large bunch kale, chopped
-2 cans (15 ounces each) white beans, drained and rinsed
-1 can (14.5 ounces) diced tomatoes
-4 cups chicken stock
-Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the sausage and cook, stirring occasionally, until browned, about 5 minutes.

3. Add the garlic and cook for 1 minute.

4. Add the kale and cook, stirring occasionally, until wilted, about 3 minutes.

5. Add the white beans, diced tomatoes, and chicken stock. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.

6. Season with salt and pepper, to taste.

7. Serve hot. Enjoy!
